Okay here’s the thing: this isn’t what I thought I was going to be posting as my first blog post on my blog that was supposed to be a whole lot about traveling. Thanks to Covid (you jerk) my blog is about exactly the opposite of traveling. And specifically now it’s about how to stay home and not eat ALL of the bad snacks and gain 5 dress sizes in 2 months. So I made some healthy-ish popsicles for you.
I’m calling them Mom+Me popsicles because 1) both me and Hattie are snacking way too often and 2) I like more grown-uppy flavors (today it’s lemon) and she likes more kiddy flavors (today it’s strawberry peach banana because that’s what we had handy).
Okay here’s how simple these are to make:
RECIPE:
1 can coconut milk
2 tbsp light agave nectar
1/2 tsp vanilla
BLEND THOSE INGREDIENTS TOGETHER WITH A FOOD PROCESSOR OR BLENDER AND THEN POUR HALF OF THE CONTENTS INTO A SEPARATE BOWL.
- Add juice of 1 lemon + zest of 1 lemon in to the half that’s in the separate bowl. Mix it together with a spoon.
- To the 1/2 that’s still in the blender/food processor, add 1/2 cup frozen peaches, 1/2 of a banana and 3 strawberries (fresh or frozen) and blend.
NOW POUR BOTH MIXTURES INTO YOUR POPSICLE MOLDS. FREEZE FOR MINIMUM OF 3 HOURS.
